Gluten Free Cookies – Yummy for Everyone!

As usual for any B&B owner, time for blogging (or anything else!) is very precious so I have had trouble finding time to write about anything else now that we’ve been doing our reviews of Commercial Drive restaurants. However, I made some gluten free cookies today and they turned out so well that I thought I would share the recipe. These are delicious and a healthy version of the old Kitchen Sink Cookies which many home bakers will have in their recipe file.  I apologize – I didn’t even take time to photograph these as they came out of the oven!

Gluten Free Kitchen Sink Cookies

1 Cup Butter
1/2 Cup White Sugar
1/2 Cup Brown Sugar
2 Large Eggs
1 Tsp. Vanilla
1/2 Cup Brown Rice Flour
1/2 Cup Oat Flour
1/2 Cup Finely Ground Almonds
1/4 Cup Potato Flour
1/4 Cup Chickpea Flour
1 Tsp Baking Soda
1/2 Tsp Baking Powder
1/2 Tsp Salt
2 Cups Organic Old Fashioned Oat Flakes
2 Cups Chocolate Chips\
1 Cup Flaked Coconut
1 Cup Raisins
1 Cup Walnuts

Preheat oven to 350 F.

Cream butter, add sugars and cream again, scraping sides of bowl down often. Add eggs one at a time and beat between each addition.  Add vanilla and beat again.  Stir in flours, baking powder, soda and salt. Stir just until incorporated, then add all other ingredients.  Stir again until everything is well mixed and dough comes together.
Roll in fairly large balls, place on parchment paper on a cookie sheet.  Press down with a fork floured with rice flour.  Bake for 14 – 15 minutes at 350 F.
